EMIN AGALAROV CONTINUES TO EXPAND CROCUS GROUP’S RESTAURANT PORTFOLIO WITH THE OPENINGS OF ROSE BAR AND NOBU AT CROCUS CITY
26.03.2015

Emin Agalarov, First Vice President of the Crocus Group, reports, “Six years have passed already since the moment we opened our first Nobu on Bolshaya Dmitrovka. We always knew from the very beginning that we wanted to open a second location of this legendary chain at Crocus City. We decided to use the concept we developed on Dmitrovka, including the luxurious Nobu Rose Bar, where Thursday through Sunday of each week you can enjoy live DJs and great parties. The layout is unparalleled: very open and filled with light, with a stunning panoramic view. Nobu features a banquet hall and plenty of parking, a true rarity for this city. Then, as in now, we opened these restaurants at the very peak of a crisis, but this does not mean we will be offering up anything less than the highest level of quality in food and service.”

The new Nobu Crocus City comprises two floors, with a total area of 1,200 square meters, and three entrances: one from the street, one from Crocus City Mall, and one from VEGAS Crocus City. The first floor is outfitted with a bar and lounge zone. Its central dining area has seating for 70, as well as a sushi bar. Upstairs, the second floor boasts a panoramic view, a separate VIP room and a large banquet hall capable of seating up to 250 guests.

The kitchen is headed up by French chef Damien Duviau and his international team: Japanese sushi chef Sohta Fujimori and pastry chef Stewart Bell, who honed his skills developing menus together with Asia’s top dessert chef, Janice Wong (2am:dessertbar, Singapore) and working at the Michelin-starred restaurant Ossiano in Dubai. Here he will debut a new selection of sumptuous sweets informed by advances in molecular gastronomy.

The menu for the second restaurant will echo the first by upholding the gastronomic philosophy of the founder of this international chain, Nobu Matsuhisa, who infused his take on Japanese cuisine with accents from South American culinary traditions, using only the highest quality produce, the finest spices, and natural ingredients. As an additional flourish, dishes from the menu at Nobu Crocus City will be prepared to perfection in a large, wood-burning oven on the first floor, brought especially from Australia.

In keeping with its traditional location above Nobu, upstairs one can find Rose Bar. Like the first location on Dmitrovka, the bar is immediately distinguished by its extraordinary architecture. With deck planks, a sliding-glass roof, circular couches positioned around adaptable tables, a contact bar with decorative, peek-a-boo shelving for beverages – it all leaves the visitor with the distinct impression that he or she has stumbled onto a luxury yacht.

The total area of the restaurant is 750 square meters. It is capable of seating 120 in the dining hall, with additional seating for 80 on the veranda, which opens for the season in May. A defining architectural advantage is the ability to combine all of the spaces into one by removing doors and opening up the larger passageways.

The fusion-inspired menu of Rose Bar Crocus City is developed by the Head Chef of the first Rose Bar, Kirill Berger. The menus will be quite similar, though the advanced technical equipment of the new kitchen will allow for even bolder culinary experiments.
